IT-FOOD is a Danish-funded research project. The overall aim of the project is to enable the industry to reduce the salt content in food (a future demand from authorities) and still produce safe products.

That is done by developing predictive models for food product development, risk management and own check systems. The models will be developed and incorporated in an existing Seafood Spoilage and Safety Predictor (SSSP) software which predicts shelf-life and growth of bacteria in different fresh and lightly preserved seafood.
