EUROFISH coordinated this four-year project with seven Danish partners that will transform fish skin by-products from the processing industry into fish gelatine and fish skin chips.
The primary fish species are cod, saithe, and salmon. The market for fish-based gelatine is very promising and the project will investigate the possible utilisation of gelatine prototypes, document the properties of gelatine, and identify the market.
Chips from cod and salmon skin have now been developed with success and different chip flavours have been successfully produced too. It is possible to keep the skin chips fresh for more than six months in appropriate bags.
Fish skin gelatine samples have been produced and compared to other industrial fish gelatine products. Target niche gelatine products and processes were developed further. The project was supported by the Danish Green Development and Demonstration Programme.
